Position: Executive Chef - South Indian Breads

The Executive Chef - South Indian Breads occupies a central role within our culinary operations, with a dedicated focus on overseeing the bread department and spearheading the mini tiffin concept at our establishment. This role demands an individual who is not only passionate about South Indian breads but also possesses a profound understanding of their unique preparation methods and the creativity to innovate within this specialty. The Executive Chef is responsible for maintaining the highest quality of products, managing costs effectively, and leading the team to produce both authentic and innovative breads along with their accompaniments.

A mandatory prerequisite for this role is significant professional experience at Saravanaa Bhavan, reflecting a comprehensive mastery over the preparation and innovation of South Indian breads, coupled with a vast knowledge of traditional recipes and culinary techniques.

Key Duties and Responsibilities
- Leadership and Supervision: Manage the bread department's operations to produce high-quality South Indian breads. Introduce and refine innovative concepts like the mini tiffin to enhance our culinary offerings.

- Quality Control: Implement a stringent quality control process to ensure all products consistently meet our establishment's high standards of excellence.

- Cost Management: Source premium ingredients such as high-quality wheat and rice flour at competitive prices. Optimize portion sizes and manage the procurement process to ensure cost-effectiveness without sacrificing quality.

- Menu and Recipe Development: Set culinary standards, design menus, and develop recipes that showcase the distinct flavors and techniques inherent in South Indian bread making.

- Production Coordination: Direct the activities of the production and dish room staff to guarantee efficient operations and seamless service.

- Safety and Sanitation: Enforce high standards of production, safety, and sanitation to maintain a hygienic and safe environment for both staff and patrons.

- Innovation in Preparation Methods: Innovate and refine preparation methods, including ingredient mixing, dough kneading techniques, and cooking processes, to deliver unique and authentic South Indian breads.

- Special Ingredients and Stuffings: Select and prepare special ingredients and stuffings, such as potato mash and cottage cheese, to enrich the bread offerings.

- Authentic Accompaniments: Supervise the preparation of authentic South Indian accompaniments, including a variety of chutneys and fillings, to complement the bread selection and elevate the dining experience.

Essential Qualifications
- Proven professional experience at Saravanaa Bhavan, demonstrating expertise in the preparation and innovation of South Indian breads, including a deep knowledge of traditional recipes and culinary practices.

- Demonstrated ability to lead a kitchen team, with a focus on South Indian bread production.

- Expertise in developing and innovating recipes and preparation techniques that align with the culinary traditions of South Indian bread making.
