Title: Executive Chef - Sweets & Savouries

Reports to: Executive Chef & Restaurant Manager

Position Summary:
As an Executive Chef specialising in Sweets & Savouries, you will lead the culinary operations for our South Indian Savouries segment. This role not only requires expertise in the conceptualisation, preparation and innovation of speciality dishes, but also a specific requirement: previous working experience at Saravanaa Bhavan is essential, along with an in-depth knowledge of their recipes. This position is crucial in developing menus, introducing new savoury dishes and managing buffet set-ups for catering, external events and religious celebrations. Supervising kitchen staff and maintaining the highest standards of quality, hygiene and safety will be your primary responsibilities, leading the team to deliver unparalleled culinary experiences.

Key Roles and Responsibilities:
- Menu planning and innovation: You will be tasked with creating and refreshing the savoury menu to offer a delightful and varied selection of South Indian specialities, leveraging your experience at Saravanaa Bhavan. You'll be expected to pioneer and introduce innovative savoury dishes to enhance our culinary offerings.

- Preparation and supervision: Oversee the preparation of savouries, ensuring that all dishes meet our high standards of taste and presentation, with particular emphasis on recipes and techniques honed at Saravanaa Bhavan. Supervise kitchen assistants and staff, guiding them from preparation to presentation.
Coordinate events: Using your background from Saravanaa Bhavan, plan and execute savoury buffets for various events and religious festivals, ensuring that each occasion is a culinary success.

- Supply chain and inventory oversight: Work closely with the supply chain to ensure that the kitchen is adequately stocked with the necessary ingredients and supplies, managing inventory effectively to reduce waste and control costs. Knowledge of Saravanaa Bhavan's supply chain practices will be an advantage.
Kitchen Operations Management: Oversee kitchen operations, ensuring a smooth workflow and adherence to menu specifications. Your experience at Saravanaa Bhavan will be invaluable in estimating food requirements and managing resources effectively.

- Health and Safety Standards: Maintain and exceed hygiene standards and ensure that the kitchen and dining areas comply with health and safety regulations. Promote a culture of cleanliness and safety, drawing on best practice from Saravanaa Bhavan.

Leadership: Perform duties independently with minimal supervision, while being accountable to the Head Chef and Restaurant Manager as required. Lead by example, fostering a positive and productive environment for the kitchen staff, using lessons learned from your time at Saravanaa Bhavan.
